Smoked Salmon and Prawn Timbale – North Atlantic Prawns bound in Marie Rose Sauce encased in Scottish Oak Smoked Salmon resting on Continental Leaves and a light Herb Oil

Crown of Seasonal Melon garnished with a Compote of Wild Berries circled with a Sugar and Mint Reduction

Anti Pasto of Continental Meats – Salami, Milano and Parma Ham accompanied by Sunblush Tomatoes, Green Olives, Balsamic Syrup and Sweet Chilli Jam
